I loved this meal. Not as much as the vegan Thai yellow curry though.
The red curry is a bit more water-y, but is lovely served over rice or rice noodles. The flavor is amazing. I could never achieve this kind of flavor on my own, and plan on never cooking again.

I don’t eat red peppers. I should have read more in detail. The sauce were brilliant but personally I would take out the red peppers and the cauliflowers. I would replace it with carrots and snap peas etc
